It is made from olives from the best olive trees in Jaén, which give rise to a very powerful oil, with a very balanced medium-high spiciness and bitterness. In the mouth it has a fruity flavour with a slight spiciness that disappears and in the nose there are herbaceous aromas of green apple, fig trees, banana peel and freshly cut grass.
